Pork Souvlaki Skewers & Greek Salad
I really love meals that consist of a big salad and a simple protein, especially in the summer. It makes me think of summers at my grandparent’s house as a kid. My grandma always made pork or chicken, and several fresh sides. We would have a big salad, corn on the cob or green beans, and roasted potatoes. I love to have a meal like that, but we are only four people and she had my mom and aunts helping her! I keep it easy, but reminiscent of our big family dinners.
This pork souvlaki and Greek salad is a major crowd pleaser in our house and very simple. I broiled the pork, but feel free to grill it! I really think it would make it that much better.
Pork Souvlaki
1 lb. pork tenderloin, cubed
juice of 1/2 lemon
1/4 c. olive oil
3 cloves of garlic, microplaned
1/4 c. fresh oregano leaves, torn
1 generous pinch sea salt
1/4 tsp. pepper
Start slicing up your pork, I sliced my pork into rectangular pieces so they would be easier for my kids to eat. Mix all the ingredients together in a bowl and refrigerate for 4-6 hours.
Allow the pork to sit at room temperature for 35 minutes before skewering. I broiled mine for 12 minutes, make sure to temp the more to check that it is cooked to you liking.
Greek Salad
I container Organic Girl Hearts of Romaine
1 cucumber, halved and sliced
1 c. cherry tomatoes, halved
1/2 small red onion, sliced thinly
1/4 c. high quality feta
Greek Dressing (see below)
a pinch of extra Maldon salt
Arrange all the ingredients flat and shallow on a platter, dress, and add a final pinch of salt. If you don’t already know this about me, I prefer serving salads on platters because all the ingredients are dispersed better. There is nothing worse that using a really nice ingredient, like the feta in this salad, and having it all slip to the bottom of the salad bowl!
Greek Dressing
1/2 c. red wine vinegar
1/3 c. olive oil
2 cloves garlic minced
1/4 tsp. dried oregano
sprinkle of chili flakes
generous pinch of Maldon salt
1/4 tsp. pepper
I love using jam jars to mix dressing, they are the perfect size and the lid allows for shaking. This dressing is amazing on this salad, but it would also be great on Greek Fries with feta.
I found this really amazing Barrel Aged Feta cheese by Kourellas at Whole Foods, and I’m obsessed.
