Crispy Gnocchi con Nduja

When I talk about specific brands, it’s because I TRULY love and use that product. That said, this recipe uses three of my favorite things: Corto Olive Oil, Trader’s Joe’s Frozen Cauliflower Gnocchi, and LaQuercia Nduja Spread! With these three product you can create a whole lotta special.

Crispy Gnocchi con Nduja

  • 2 bags Trader Joe’s Cauliflower Gnocchi

  • 4 oz tube of LaQuercia Nduja Spread

  • 3 c. homemade or prepared pasta sauce

  • 2 c. baby spinach

  • 1 tbsp. chopped garlic

Coat the frozen cauliflower gnocchi liberally in olive oil and sprinkle with some salt and pepper. Bake at 375 degrees for 35 minutes, flipping 20 minutes in. I like mine super crispy, so watch them and make sure they are to your liking!

Meanwhile, in a cast iron pan crisp up the LaQuercia Nduja Spread in little dollops for 3 minutes a side on medium-high. Plenty of fat will render out so you don’t need to add olive oil. Set aside on a plate. Add garlic and sauté for two minutes, then add any homemade meat or marinara sauce you may have. In a pinch even jarred will do!

Add 2 cups baby spinach to the sauce and allow to wilt. Finally, place the baked gnocchi to combine, gently turning to coat with the sauce, and add nduja for one final turn of the pan.
